This is a simple recipe from France – 14th c.

Ingredients:

chicken
butter
1/2 cup ground almonds
1 tsp. cinnamon
1/4 tsp. ginger
1/8 tsp. cloves
1/8 tsp. grains of paradise
salt

 Boil the Chiken in salted water. When cooked cut it into small pieces.

 

Than fry it in butter until starts to brown.

 

Add the grounded almonds, spices and the broth and bring it to a boil. Shimmer untill thick.

Serve hot with pint or two of ale🙂
